CHEESE & PRESERVING SALT - 500 GRAMS
Cheese and Preserving Salt are large-grained, with large faceted crystals and an open granular structure. The grain size and structure allow them to absorb more moisture than other salt forms.
Cheese Making:
Cheese & Preserving Salt contains no iodine, no anti-caking agent, and is not bleached. Iodine kills the lactic bacteria in cheese's aging process, which is vital to the proper aging of your cheese. Cheese & Preserving salt helps in flavour production, preservation, and brining your cheese.
Fermenting:
Lactic acid bacteria are also used in fermenting, which, once again, will be killed by regular salt with iodine added. Always use cheese and Preserving Salt when fermenting and pickling.
